If you life gives you pico di gallo, guacamole and egg whites, you make a Mexican omelette.

200 g - 7 oz Egg whites, liquid
100 g - 3.5 oz Guacamole
100 g – 3.5 oz Pico di Gallo

In a bowl, whisk the egg whites with a bit of salt to taste.
Heat a bit of oil in a skillet and make an omelette. If you want to master you omelette making technique, watch this video first.
As soon as the omelette is (almost) done, add the guacamole and on top of the pico di gallo.
Fold the omelette carefully.
Heat it on very low heat for ~1-2 minutes. Enjoy!
